Banana oat muffins

Rico's note: Use the overripe bananas nobody wants to eat anymore — this is the perfect place for them.

Ingredients

  • 2 ripe bananas, mashed (200 g / 7 oz)
  • 2 cups gluten-free oat flour (180 g / 6½ oz)
  • ⅓ cup white or brown sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (95 g)
  • 1 tbsp baking powder (12 g)
  • 1 tsp cinnamon (2 g)
  • 2 eggs (100 g / 3½ oz)
  • ⅓ cup coconut oil (70 g / 2½ oz)
  • ¼ cup almond milk (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 190 °C (375 °F) and prepare a 12-cup muffin pan.
  2. In a bowl, mix the oat flour, sugar, baking powder and cinnamon.
