Baked salmon with sweet potato and broccoli

One sheet pan, from oven to table in 35 minutes.

Rico's note: Make a double batch on Sunday: eat one portion right away and pack the other for a weeknight when you don't want to think about dinner.

Ingredients

  • 1 salmon steak (150 g / 5½ oz) — with or without skin
  • 1 medium sweet potato, diced (150 g / 5½ oz)
  • 200 g (7 oz) broccoli florets
  • 1 tbsp olive oil (10 g)
  • 1 lemon, juice only (30 g / 1 oz)
  • fresh rosemary, to taste
  • salt and black pepper, to taste

Method

  1. Preheat the oven to 200 °C (400 °F) and line a baking sheet with parchment paper.
  2. Cut the sweet potato into even cubes and roast for 15 minutes.
