No-added-sugar version: 97 kcal and 0.2 g sugars per serving.

Values are for the first option listed in the ingredients; substitutions and variations change them. Carbs exclude fiber; energy uses the EU conversion factors (fiber at 2 kcal/g). Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Baked mini chocolate donuts

Fluffy and ready in 25 minutes in the oven.

Rico's note: For when you want something sweet midweek without going off track — they taste like chocolate cake but don't weigh you down.

Ingredients

  • 1 cup almond flour (100 g / 3½ oz)
  • ¼ cup 100% cocoa powder (22.5 g / ¾ oz)
  • ¼ cup white or brown sugar (50 g / 1¾ oz) — no added sugar: ⅓ cup erythritol (63 g)
  • 1 tsp baking powder (4 g)
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp melted coconut oil (39 g / 1½ oz)
  • ¼ cup almond milk (60 g / 2 oz)
  • coconut oil, for greasing

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a donut pan well.
  2. In a bowl, mix the almond flour, cocoa, sugar and baking powder.
