Arracacha rolls, pão de queijo-style

Soft inside with a thin crust outside — just arracacha and polvilho.

Rico's note: An alternative to traditional pão de queijo (Brazilian cheese bread) for when you want something lighter as a mid-afternoon snack.

Ingredients

  • 1½ cups arracacha (Peruvian parsnip), cooked and mashed (330 g / 11½ oz)
  • 1 cup sweet cassava starch, polvilho doce (120 g / 4 oz)
  • ½ cup sour cassava starch, polvilho azedo (60 g / 2 oz)
  • ¼ cup olive oil (40 g / 1½ oz)
  • 1 tsp salt (6 g)

Method

  1. Preheat the oven to 200 °C (400 °F) and line a baking sheet.
  2. In a bowl, mix the still-warm arracacha purée with the olive oil and salt.
