Values are for the first option listed in the ingredients; substitutions and variations change them. Carbs exclude fiber; energy uses the EU conversion factors (fiber at 2 kcal/g). Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Almond brittle

It snaps like praline, but it's just almonds, sugar and a drizzle of coconut oil.

Rico's note: Break it over a simple cake to give it a different texture, with hardly any effort.

Ingredients

  • ½ cup sliced almonds, or chopped (45 g / 1½ oz)
  • 1½ tbsp sugar (18 g / ¾ oz) — no added sugar: 2 tbsp erythritol (26 g)
  • 1 tsp coconut oil (5 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a nonstick skillet, quickly toast the almonds over low heat.
  2. Add the sugar and coconut oil.
