Values are for the first option listed in the ingredients; substitutions and variations change them. Carbs exclude fiber; energy uses the EU conversion factors (fiber at 2 kcal/g). Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Almond and date balls

An energy snack of almond, date and coconut, ready in 15 minutes.

Rico's note: Take them to the gym in a jar — real energy without a protein shake that tastes like plastic.

Ingredients

  • 150 g (5½ oz) toasted almonds
  • 100 g (3½ oz) Medjool dates — pitted
  • 50 g (1¾ oz) shredded coconut
  • 2 tbsp cocoa powder (16 g / ½ oz)
  • 1 tsp ground cinnamon (3 g)
  • 1 orange, zest only (6 g)
  • extra shredded coconut, as needed (20 g / ¾ oz) — for the topping
  • water, as needed — if the dough is dry

Method

  1. Put the almonds in the food processor and pulse until finely chopped.
  2. Add the dates and process until the mixture comes together into a dough.
