Zucchini mini pizzas with tomato and mozzarella

Zucchini rounds as the base, with tomato sauce and melted mozzarella.

Rico's note: For when you're craving pizza but don't want dough or two hours of oven time. Cut the zucchini rounds fairly thick, or they'll fall apart before the cheese melts.

Ingredients

  • 1 medium zucchini (200 g / 7 oz)
  • 60 g (2 oz) tomato sauce (passata)
  • 60 g (2 oz) shredded reduced-fat mozzarella
  • 5 g dried oregano
  • fresh basil, to taste
  • extra-virgin olive oil, as needed
  • salt and black pepper, to taste

Method

  1. Wash the zucchini and cut it into 1 cm (½ in) rounds. Pat dry well with paper towels.
  2. Arrange the rounds in a single layer in the air fryer basket. Brush with a little olive oil and season with salt and pepper.
