Tall, airy pan pizza

This is the Roman family of rectangular pizza served by the piece: open crumb, uneven surface and a base that has to hold up the slice. Here, 75% hydration makes the job at home a little more manageable than professional formulas above 80%. Folds, cold fermentation and careful stretching take the place of the temptation to add flour until the dough stops sticking.

Rico's note: A good recipe for putting the pan in the middle of the table. Everyone picks their own piece and no one has to wait for the next pizza.

Ingredients

  • 500 g (1 lb) white bread/pizza flour
  • 375 g (13 oz) water
  • 12 g fine salt
  • 1 g instant dry yeast
  • 15 g (½ oz) extra-virgin olive oil
  • 16 g (½ oz) olive oil for the pans
  • 10 g olive oil for the surface

Method

  1. Mix the flour and yeast with 340 g of the water. Stir until you see no dry flour; cover and rest for 20 minutes.
  2. Dissolve the salt in the remaining 35 g of water. Add this water in three additions, squeezing and folding the dough until each one is absorbed.
