Lupini beans with lemon and olive oil

The classic Portuguese café-terrace snack, made at home in two minutes.

Rico's note: Keep a jar of canned lupini beans in the pantry for when you want a light snack in the evening.

Ingredients

  • 200 g (7 oz) canned lupini beans, drained
  • sea salt, to taste
  • ½ lemon, juice only (15 g / ½ oz)
  • 1 tbsp extra-virgin olive oil (10 g)
  • fresh chili, chopped, to taste — optional
  • fresh cilantro, chopped, to taste — optional

Method

  1. Drain the lupini beans from their brine and rinse them under cold water.
  2. Put them in a bowl and season with sea salt to taste.
