Flour blend for light sandwich bread

Ingredients

  • 400 g (14 oz) white rice flour
  • 300 g (10½ oz) sweet cassava starch (polvilho doce)
  • 200 g (7 oz) potato starch
  • 100 g (3½ oz) fine gluten-free oat flour

Method

  1. Sift the rice flour, sweet cassava starch, potato starch and oat flour into a large bowl — twice.
  2. Sifting twice is what makes the finished loaf lighter.
