Gluten-free open-faced esfihas

A yeasted dough topped with seasoned ground beef, esfiha-style.

Rico's note: Always let the filling cool before topping the raw dough — if it's hot, everything goes soft and the esfiha won't get its crisp edge.

Ingredients

  • 2 cups rice flour (300 g / 10½ oz)
  • 1 cup sweet cassava starch, polvilho doce (130 g / 4½ oz)
  • 2 tbsp psyllium husk (16 g / ½ oz)
  • 1 tsp salt (5 g)
  • 1 tbsp active dry yeast (10 g)
  • 2 tsp sugar (8 g) — no added sugar: 1 tbsp erythritol (12 g)
  • 1 cup warm water (240 g / 8½ oz)
  • 1 egg (50 g / 1¾ oz)
  • 3 tbsp olive oil (39 g / 1½ oz) — for the batter
  • 250 g (9 oz) ground beef
  • 1 chopped onion (80 g / 2¾ oz)
  • 1 chopped tomato (90 g / 3¼ oz)
  • 1 tbsp olive oil (13 g) — for the filling
  • 1 tbsp lemon juice (15 g / ½ oz)
  • salt and black pepper, to taste

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Activate the yeast in the warm water with the sugar — let it sit for 5 minutes, until foamy.
  2. In a large bowl, mix the dry ingredients: the rice flour, sweet cassava starch (polvilho doce), psyllium husk and salt.
