Ingredients
- 80 g (2¾ oz) unsweetened shredded coconut
- 48 g (1¾ oz) almond flour
- 30 g (1 oz) sugar — no added sugar: 40 g erythritol
- 1 egg (50 g / 1¾ oz)
- 30 ml (2 tbsp) coconut milk
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.
Method
- Preheat the oven to 190 °C (375 °F) and line a baking sheet with parchment paper.
- In the food processor, briefly pulse the shredded coconut, almond flour and sugar, just to combine.
