Chocolate avocado ganache

Creamy, glossy and ready in minutes, with no dairy.

Rico's note: Use this when you want to fill a proper cake — it turns silky and nobody notices the avocado.

Ingredients

  • 1 medium ripe avocado (140 g / 5 oz) — flesh only
  • ½ cup 100% cocoa powder (45 g / 1½ oz)
  • ⅓ cup white or brown sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (or xylitol) (100 g)
  • ¼ cup coconut milk, or water (60 g / 2 oz)
  • 1 tsp vanilla extract (4 g)
  • 1 pinch salt (0.5 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.

Method

  1. Halve the avocado, remove the pit and scoop the flesh into a food processor.
  2. Add the cocoa, sugar, coconut milk, vanilla and salt.
