Cheese-stuffed chicken croquettes

Shredded chicken with yogurt, stuffed with cheese and breaded without frying.

Rico's note: Make a big batch of these on Sunday and you'll have snacks ready for the week.

Ingredients

  • 4 chicken breasts (1000 g / 2¼ lb)
  • 200 g (7 oz) low-fat Greek yogurt
  • salt, pepper, paprika and garlic powder, to taste
  • 8 reduced-fat spreadable cheese wedges, or 120 g reduced-fat cream cheese (160 g / 5½ oz)
  • 10 reduced-fat cheese slices (190 g / 6½ oz)
  • 2 eggs (100 g / 3½ oz) — for breading
  • 100 g (3½ oz) sugar-free corn flakes

Method

  1. Cook the chicken breasts in boiling water with a pinch of salt for 15 to 20 minutes (or, well seasoned, in the air fryer or oven at 180 °C (350 °F) for 30 minutes). Shred the meat.
  2. Mix the shredded chicken with the yogurt and season well. Add the cheese wedges or cream cheese and stir everything together.
