Nourishing quinoa blend

An alternative to the chickpea blend for bread and cake.

Rico's note: Choose this one over the chickpea blend when you want a milder-tasting bread.

Ingredients

  • 400 g (14 oz) quinoa flour
  • 300 g (10½ oz) white rice flour
  • 300 g (10½ oz) sweet cassava starch (polvilho doce)

Method

  1. Sift the quinoa flour, rice flour and sweet cassava starch (polvilho doce) into a large bowl.
  2. Mix well — quinoa flour can have a stronger smell, but it mellows in the oven.
