All-purpose 1-to-1 blend

Replaces wheat flour in almost any recipe.

Rico's note: It's worth keeping a jar of this ready, because it replaces regular flour in almost everything.

Ingredients

  • 400 g (14 oz) rice flour (half white, half brown)
  • 250 g (9 oz) sweet cassava starch (polvilho doce)
  • 200 g (7 oz) sorghum flour
  • 150 g (5½ oz) potato starch

Method

  1. Sift the rice flour, sweet cassava starch (polvilho doce), sorghum flour and potato starch into a bowl.
  2. Mix very well until uniform.
